What’s a Tortilla?
According to Mayan legend, tortillas were invented ten thousand years before Christ to appease a hungry King. Traditionally,they are made from corn cooked in a lime-based solution or by using corn flour, then formed into a pancake and baked. In the U. S. tortillas are more popular than all other ethnic breads, even bagels, English muffins or pitas. They can be warmed in the oven, grilled, fried, heated in the microwave or baked. They are low in fat and high in iron with about one hundred fifteen calories per serving. Anything you can fit in a sandwich you can wrap in a tortilla, but favourites include sautéed peppers and onions with chunks of beef, chicken or pork, lettuce, tomatoes, cheese, sour cream and salsa. Now that’s a complete meal on the Mexican Food Pyramid!
